Wellington Lake Recipe Forum- Your Recipes Required!

BONE'S SALAD -6 Servings

Ingredients for Raspberry Vinaigrette:
1 Egg Yolk; 1/2 cup Raspberry Vinegar; 1/2 cup Dijon Mustard; 3 Tbs. Sugar; 1/2 t Basil; 1/2 t Oregano
1 1/2 cup Berio Olive Oil (not extra virgin)

Ingredients for Salad:
6 Small Heads of Boston lettuce, washed and dried
1 cup Stilton Cheese, grated
1 cup Roasted Pistachio Halves, unsalted
1/2 tsp Cinnamon
2 Granny Smith Apples, cored and cut into 12 slices per apple

Method for Raspberry Vinaigrette:
Whisk first 6 ingredients in a bowl to blend.
Gradually whisk in oil.
Chill at least one hour before use. (Can be prepared 1 day ahead.)

Method for Salad:
Sprinkle apples with cinnamon and set aside.
In a medium bowl, place washed Boston lettuce and pistachios and toss with raspberry vinaigrette.
Divide salad mix into 6 servings and place on plates creaing a mound affect.
Arrange 4 apple slices around the edge of the mix, spaced evenly apart and partially touching the plate. Serve.
